Erwin Lauterbach was a household name in Denmark long before celebrity chefs were a thing. His commitment to showing off local ingredients and giving vegetables starring roles has deeply influenced Danish cooking culture and, in 2004, he was one of 12 chefs to sign the Nordic Kitchen Manifesto, which has transformed Nordic cuisine at home and its reputation abroad. His current restaurant, Lumskebugten, stays true to its historical Copenhagen dockyard character but endows the best of Danish traditional cooking with all that Lauterbach has learnt – so far.
