Why ERTH should be your first stop in Stockholm

In the heart of Stockholm’s vibrant food hall Hötorgshallen, ERTH is redefining what a modern meat experience can be. Combining restaurant, deli and butcher under one roof, the concept serves as both a destination for conscious food lovers and a showcase for the wider Globe Foods group.
ERTH stands for environment, responsibility, taste and happiness, reflecting the vision behind the company’s founding in 2022: to bring greater transparency, quality, and understanding to the meat industry. “We want to make it easier for people to make informed choices,” says CEO Johan Fors. “It’s not always obvious where food comes from or how it’s produced.”

At the core of the concept is a strong belief that quality goes beyond geography. Rather than focusing on origin alone, ERTH carefully selects producers based on animal welfare, farming practices, and craftsmanship. “Not everything local is automatically best, and not everything imported is worse,” Fors explains.
A visit to ERTH is an experience. The raw ingredient takes centre stage, whether guests are dining in or shopping from the deli, and the knowledgeable staff are always ready to give the full background of that one specific piece of meat – from farm to fork. Should you still need more details, you have full access to the always present black leather-bound book called The Meat Bible. In a unique setup, visitors can even choose any cut directly from the butcher’s counter and have it prepared in the kitchen.

Education and accessibility are equally important. Through popular meat tastings and daily interactions, ERTH aims to guide customers toward better choices and new discoveries. “It’s okay not to know,” says Sebastian, head of brand.
“That’s why we’re here.” The idea is simple: eat less meat but choose higher quality and make it an experience.

Located in one of Stockholm’s most diverse and welcoming food markets, ERTH mirrors the city’s international culinary identity. The atmosphere blends premium dining with the relaxed, social feel of a traditional market hall – what the team describes as a modern meat bistro.

For many visitors, the experience leaves a lasting impression. As Fors notes: “A common reaction we hear from tourists is: ‘We’re leaving tomorrow – if only we had found this place on our first day.’”
At ERTH, sustainability, flavour, and knowledge come together – inviting guests to rethink not just what they eat, but how and why they eat it.
