“We actually started thanks to Matthew, our British co-founder, wanting to start a fish-and-chip shop in Copenhagen. That, as a dish, wasn’t really available, and those he could find weren’t up to scratch. Every time we’d meet up, we’d discuss this dream, and then one day we went out and bought a food truck,” explains Kasper Christensen, co-founder of Hooked. After some trial and error and a steep learning curve in their own kitchen, they had created a menu that included everything from fish and chips to a lobster roll. It was based around the idea of making the fish the star of the show, where speed and quality were also added bonuses.
