Set within the five-star hotel The One Monumental Palace, Le Monument restaurant brings the soul of Portuguese gastronomy to the heart of Porto. With its Michelin star, immersive ambiance, and culinary artistry, Le Monument offers guests an exciting voyage across Portugal’s terroir and tradition on their plates.
From the outset, Le Monument distinguishes itself with a thoughtful approach. Guests are welcomed by name, then guided to a dedicated transition space where images of the Douro Region introduce the restaurant’s cultural roots, before guests begin their meals in the main restaurant, which combines the building’s historic architecture with a modern, comfortable atmosphere.

The chosen materials and lighting highlight the restaurant’s heritage while maintaining an inviting feel that balances tradition with contemporary design and timeless elegance. Another highlight is the kitchen ritual in a breathtaking Art Deco setting, offering guests an intimate introduction to the chef and a behind-the-scenes look.
At the core of Le Monument’s culinary offering are curated tasting menus conceived as sensory voyages through Portugal. Each chapter within these menus pays tribute to the country’s diverse terroir, celebrating seasonal products sourced directly from their regions of origin. French chef Julien Montbabut and his team approach Portuguese flavours as a continuous exploration, blending traditional soul with modern technical precision.

At the opening of the meal, guests are treated to a trio of amuse-bouches with biological olive oil and artisanal breads to focus on pure product origins. Julien Montbabut explains: “This initial trio of amuse-bouches sets a high standard for what follows: an approachable yet elevated journey through the Portuguese terroir. And, in line with recent global trends and the increasing availability of high-quality products, we offer a non-alcoholic pairing option.”

Among signature dishes, the Vila do Conde Brown Crab stands out. “The crab is hand-selected by a dedicated local fisherman from the shores of Vila do Conde and delivered directly to the Le Monument kitchen to ensure peerless freshness,” says Montbabut. And, to ensure that every dish is also a reflection of respect for nature, sustainability, local sourcing, waste reduction and the use of seasonal produce stand at the core of Le Monument’s philosophy.
Le Monument invites international travellers and locals alike to discover the essence of Portugal – one unforgettable menu at a time.
