As a Norwegian chef, it takes a bit of courage to move to Copenhagen, the heartland of New Nordic cuisine, and set up a restaurant promoting Norwegian produce. Nonetheless, that is what the two Norwegian chefs Sigurd Mo Bjørklund and Simon Selliseth and their Danish colleague, Jakob Burmølle-Jensen, have done. Now, six months into their Danish venture, they have managed to convince everyone from professional food critics to regular foodies that the Norwegian kitchen has something to offer Copenhagen’s famous gourmet scene.
